How do schools with “bag men” operate?

I understand sometimes a parent is given a job etc....and cam Newton’s dad got a huge donation to his church....but how do the cash gifts etc work? Cars etc? How is that not noticed immediately. Just inability of NCAA to audit/subpoena tax returns and bank records? They (NCAA) just have to accept what they are given?

I’ve seen players get handed money (long time ago and not at mizzou of course for tending bar...but that’s their job
