Kick off rule question

on the last kickoff by Mizzou, the Tennessee player let the ball go over his head but the ball appeared to stop in the end zone without going out of bounds. The officials ruled it a touchback, but couldn’t have Mizzou’s coverage team recovered it for a touchdown? This is of course moot if the ball actually went out of bounds.
